Sumac Pickled Shallots

¼ cup Saffi Sherry Vinegar
3 shallots thinly sliced 
6 tablespoon sumac
½ teaspoon salt

1. Put the shallot in a small bowl with the sumac, vinegar and an eighth of a teaspoon of salt. 
2. Mix together with your hands, so the sumac gets well massaged into the shallots.
3. Leave for 30 minutes. Add into any salad, pairs well with tomato and basil.
