Vegan Rosemary Cheddar Crackers

3 tablespoons Saffi Extra Virgin Olive Oil
1½ cup all-purpose flour
½ cup grated vegan cheddar cheese
1½ teaspoon kosher salt
1 teaspoon white sugar
½ cup cold water
1 tablespoon minced fresh rosemary

1. Preheat oven to 400° F.
2. Line baking sheet with parchment paper. Mix together flour, salt, sugar and cheese. Add rosemary, drizzle with olive oil and add water. Mix until dough becomes sticky and pulls away from side of bowl.
3. Knead on floured surface for about 4 minutes. Divide in half. Roll dough into 1/8 thickness. Brush with water and sprinkle with salt. Prick with fork to let our steam. Cut into desired shape and transfer onto baking sheet and bake for 10-15 minutes.
